Almond Joy Bread

I came up with this recipe while trying to use up buttermilk which I don't usually keep on hand . . . but with the way my family loved this bread, buttermilk may become a pantry staple. It's a dense, sweet bread perfect for holiday gatherings and get togethers. I hope you enjoy it!
2 cups sugar
3/4 cup vegetable oil
4 eggs
1 1/2 teaspoons coconut extract
1/2 teaspoon almond extract
3 cups flour
1 teaspoon non-aluminum baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 1/2 cups sweetened coconut
1 cup chopped almonds
1 cup chocolate chips
In the bowl of your mixer, blend the sugar, oil, eggs, and extracts. In a separate bowl, combine the flour, baking powder, baking soda, and salt; add to the sugar mixture, alternating with the buttermilk till just moistened. Fold in coconut, chocolate chips, and almonds. Pour into 2 greased loaf pans and bake at 325 degrees for 60-15 minutes. Done when toothpick comes out clean. Cool for 10 minutes in pans before removing; then cool on wire racks.
