The Tinsley House Cookbook
Museum of the Rockies, Bozeman, Montana

The Tinsley House is located at the Museum of the Rockies in Bozeman, Montana.  It is a two-story farmhouse that was built in 1889 by William and Lucy Tinsley and their eight children.  You can find out more information about it by going to the Museum's website at: www.museumoftherockies.org  - The house is open seasonally to the public.

Preheat oven to 400 degrees

3 cups flour
2 tablespoons sugar
3/4 teaspoon salt
1 tablespoon plus 1/2 teaspoon baking powder
3/4 teaspoon cream of tarter
3/4 cup butter
1 egg, beaten
1 cup milk + 2 tablespoons

Combine dry ingredients and cut in butter with pastry blender.  Combine egg and milk.  Add to dry ingredients and stir until well moistened.  Knead 10 times.  Roll out 1" thick, cut with 2 1/2" cutter.  Bake on ungreased cookie sheet until done 12-15 minutes.
