First Premium Lemon Circles

Preheat oven to 350 degrees.
Base
1 cup butter, softened to room temperature
2 cups flour
½ cup confectioners’ sugar
Lemon topping
4 large eggs, at room temperature
1 ¾ cups sugar
4 tablespoons flour
½ cup lemon juice, at room temperature
To make the base
Line a 13 X 9 baking pan with parchment paper, and make the paper is long enough to have handles on both sides. Spray the parchment paper with PAM. Set aside.
In a medium bowl, mix the butter, flour, and sugar with a pastry blender or with your hands until the mixture is well blended. Pat the mixture evenly on the bottom of the pan. Bake for 30 minutes.
To make the topping
While the base is baking, beat the eggs. Add the sugar. Mix thoroughly. Add the flour and mix it until it is incorporated.
When the base is baked, remove the pan from the oven. Add the lemon juice to the sugar mixture and mix well. Pour it over the warm base and bake it for 20 minutes.
Take out of the oven and let cool completely on a rack. Then using the handles of parchment paper, take it out of the pan and place it on a cutting board. Using a 2-inch biscuit cutter, cut circles into the baked item and place on a plate. Serve as a snack or dessert. Serves 6-8.
