Fluffiest Pancakes Ever!

When I tried this recipe I knew I would be making my pancakes like this from now on! They are the fluffiest pancakes I've ver had!
3 cups flour
5 teaspoons baking powder
1 teaspoon kosher salt
5 tablespoons white sugar
2 1/2 cups milk
4 tablespoons butter-melted but not hot
2 large eggs
2 teaspoons pure vanilla extract
In a large bowl, sift the flour, baking powder, salt, and sugar twice. This is very important in making these pancakes light. Make a well in the center and pour in the milk, egg, melted butter, and extract - mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour our scoop the batter onto the griddle, using approximately 1/4 for each pancake. Brown on both sides and serve hot.
