Chocolate Cake with Frosting
by Judi Harris
This chocolate cake is my Chocolate Loaf Cake that's not baked in a loaf pan. It's baked in a 9 inch square pan and then topped with a delicious chocolate frosting.
1 c water
1/3 c chocolate syrup
1/2 c oil or applesauce (using applesauce saves calories and it doesn't effect the taste of the cake)
3 eggs or egg substitute
1 box betty crocker super moist triple chocolate fudge cake mix
1 c semi-sweet chocolate chips
1. Preheat oven to 350 degrees.
2. Grease a 9 inch square pan with PAM.
In a large bowl, combine the water, chocolate syrup, oil or applesauce, and eggs. Add the cake mix and chocolate chips and beat on medium speed for 2 minutes.
Pour the batter into prepared pan and put on a cookie sheet. Place in oven and bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean.

The Pioneer Woman
1-3/4 stick Butter (that's 3 1/2 sticks of butter)
4 Tablespoons (heaping) Cocoa
6 Tablespoons whole milk
1 teaspoon vanilla
1 pound powdered sugar
In a saucepan, melt the butter, then add the cocoa, milk, and vanilla. Whisk to combine. Slowly add the powdered sugar, 1 cup at a time, and whisk until dissolved. You can make this frosting as thin (like a glaze) or as thick as you want. The first time I made it I turned it into a glaze and that worked great. A few days ago when I made it again, I made it thicker, but it was still pourable. I got "rave reviews" on the the cake and frosting!
