Ruby Red Grapefruit Chicken
Secrets from the White House Kitchens Cookbook
By Chef John R. Hanny
2 ruby red grapefruits
1 tablespoon honey
1/4 teaspoon salt
3 tablespoons butter or margarine
1/2 cup whole cranberry sauce
1/4 teaspoon cloves, ground
1 frying chicken, disjointed
Peel and section the grapefruit, squeezing all juice from membranes into a saucepan. Add cranberry sauce, honey, cloves, and salt, mixing well, then bring to a boil. Stir in the grapefruit sections. Brown your chicken in butter in a frying pan, then place in a shallow baking dish. Baste with grapefruit sauce. Bake in a 350 degree F. oven for about 45 minutes, basting frequently. Serve the chicken with the remaining grapefruit sauce.
Serves 4 people.
Author's note: An especially popular dish, not only in the Ford administration, but also in the Johnson and Kennedy admnistrations. Cheff Henry Haller originally got this recipe from Rene Verdon and when Haller presided over the kitchens at the White House, he used it often.
