Tender and Flaky Salmon

Preheat oven to 350 degrees. Spray a 13 X 9 X 2 pan with PAM.
2 12-15 inch salmon fillets from Costco
1/2 cup white wine (Chardonnay)
1 stick margarine, melted
Light olive oil for brushing
salt and pepper to taste
seafood seasoning of your choice, to taste
Onion powder to taste
Bottled or fresh lemon juice
Melt the margarine in the microwave; stir in the white wine. Pour the mixture into the baking dish.
On a cutting board, place the large salmon fillet. Take a damp paper towel and wash the fillets. Pat dry, then brush the fillets with olive oil. Cut into large pieces. 4-6 inch fillets. Sprinkle with salt, seafood seasoning and onion powder. Arrange the fillets in pan according to size. Pour the lemon juice around the inside edges of the pan and also down the middle. Cover with aluminum foil.
Bake for around 55 minutes until tender and flaky. Let sit for 10 minutes before serving. Spoon some of the juice over the filet once it's plated.
Serve with gold potatoes and asparagus.
