Potato-Corn Chowder
Dice 2-3 pieces of bacon (or use diced ham). Cook bacon in pot; carefully drain excess fat.
Clean and dice 2 medium red potatoes; add to pot; add 1 cup water; cook 10 minutes.
Peel and grate 2 carrots; add to pot and cook an additional 5 minutes
Add can of white shoe-peg corn.
Make a white sauce by melting in a small pan - 3 tablespoons margarine
Add 3 tablespoons flour; cook on low heat for a minute; then add 1 1/2 cups milk and whisk to mix; cook on low heat until sauce thickens.
Mix white sauce into vegetable mixture
Add salt/pepper/ herbs (dill or thyme) to taste
Heat through and serve on a cold night.
