Champion Banana Sour Cream Bread

My friend, Terri LeBaron from www.justapinch.com sent me this recipe. It was originally called "Nanny's Banana Cream Bread." The story goes that when Terri was a little girl she had a nanny. Nanny was from Scotland and brought this banana bread recipe over with her, as it was in her family and it's over 100 years old. It's won many awards according to Terri and everyone always asks for the recipe. It won a Champion ribbon at our county fair last weekend (August 25, 2012).
Preheat oven to 350 degrees
1 cup butter
2 cups sugar
4 eggs
1/3 cup sour cream
2 teaspoons vanilla
4 cups flour
2 teaspoons baking soda
1 teaspoon salt
8 medium/large bananas (if bananas are on the small side use 9-10)
This will make 2 large loaves in regular loaf pans. Spray both pans with PAM Baking.
Cream butter and sugar. Add eggs, one at a time, then sour cream and vanilla. Mix until fluffy – about 30-40 seconds. Combine flour, baking soda, and salt in a small bowl. Alternately add dry ingredients and mashed bananas to creamed mixture, mixing 15-20 seconds after each addition. Mix just well until combined. Pour batter into loaf pan; bake for 55-65 minutes, or until toothpick inserted in center comes out clean. Let set in pan for 15 minutes, then move to wire rack to cool.
