First Place Banana Bread
Preheat oven to 350 degrees
1 3/4 cup self-rising flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
1/3 cup shortening
2/3 cup sugar
2 eggs, well beaten
1 cup banana pulp (3-4 ripe bananas)
Mash ripe bananas with a fork. Cream shortening and beat sugar. Add eggs, mixing well. Mix and sift flour, baking soda, cream of tartar, and salt. Add flour alternately with bananas, mixing well after each addition. Turn into greased loaf pan and bake for 45 minutes to 1 hour, or until the top is brown and a toothpick inserted comes out clean. Let cool for 5 minutes in pan then turn out onto cooling rack.
