Apple Cake
Preheat oven to 350 degrees.
2 large eggs - beat until foamy and add:
1 cup vegetable oil
2 cups sugar
1 teaspoon vanilla
Sift together (this will be very thick):
2 cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
Add:
4 cups thinly sliced and peeled (Pippin or Granny Smith) apples
1 cup chopped walnuts
Bake in a 13 x 9 1/2 inch pan for 45 minutes to 1 hour.
Cool and frost with:
2 small packages of cream cheese
3 tablespoons melted butter or margarine
1 teaspoon vanilla
1-2 cups powered sugar
Mix to the right consistency. Drizzle over cake.
