Ham and Swiss Quiche

Preheat oven to 350 degrees
1/2 cup Keebler Club Multi-grain crackers
4 eggs, slightly beaten
1/3 cup all purpose flour
1/4 teaspoon pepper
1/8 teaspoon nutmeg
1 cup low-fat cottage cheese
1 cup shredded Swiss cheese
1 cup finely chopped ham
1/2 cup shredded carrots
1/4 cup sliced green onions
Sprinkle Keebler Club cracker on bottom and sides of a 9-inch pie plate generously coated with cooking spray; set aside. In a medium bowl whisk together eggs, flour, pepper, and nutmeg until smooth. Stir in cottage cheese, swiss cheese, ham, carrots, and green onions. Carefully pour into prepared pie plate. Bake for about 40 minutes our until knife inserted in center comes out clean. Cool on wire rack 5-10 minutes.
