Fried Rice
Add diced pork or small cooked shrimp to this basic recipe for a full-flavored side dish or satisfying entree.
2 tablespoons vegetable oil
3 1/2 cups cooked rice, chilled
2 tablespoons soy sauce
1/4 cup scallions, thinly sliced
1 egg, lightly whipped
Heat a non-stick skillet or wok. Add oil and heat over medium heat just until smoking. Carefully add the rice (it'll pop - be careful!). Stir in soy sauce and scallions; stir while cooking for about five minutes. Add whipped egg and stir until egg is set. Serves 4.
Note: This is soooooooooo good that I always make a double batch.
