1 cup white cornmeal
1 quart milk
2 tablespoons butter
4 eggs, well beaten
1/4 teaspoon salt
Scald the milk in top of double boiler. Place over hot water, stir in cornmeal, butter, and salt. Cook for 15 minutes, or until thickened, stirring frequently. Pour over eggs. Bake in greased casserole in hot oven (400 degrees F) for 45 minutes.
Serves 6.
Author's note: Use only whole milk.
