My Favorite Chili

4 tablespoons canola oil
1 cup diced onion
1/2 green pepper, diced
1 cup diced celery
1 small clove garlic, cut fine
1 pound ground beef or turkey
2 cups canned tomatoes (or fresh)
1 - 2 tablespoons chili powder
2 tablespoons water
1 teaspoon salt
2 teaspoons sugar
2 cups cooked or canned red kidney beans
Melt oil in bottom of large cooking pot. Add onion, green pepper, celery, and garlic - cook until partially tender, stirring occasionally. Add beef and cook uncovered until browned. Add tomatoes and chili powder which has been mixed with t tablespoons cold water. Add salt and sugar. Cover, bring to boil, then simmer slowly for about 1 hour or until thickened.
Add beans and heat well.
Serve in bowls with crackers, hard rolls, or cornbread and a green salad. Recipe can be doubled and extra servings frozen. Sometimes I have added 1/2 pound of Jimmy Dean sausage, well cooked and drained of grease with the beef or little sausage links, cooked, sliced, and drained too.
