Creamed Peas and Potatoes

Nothing beats this comforting side dish to go with your family's favorite entree. The peas and potatoes combine with a creamy white sauce making a satisfying dish that also adds sparkling appealing color to any meal.
4 medium red potatoes, cubed
1 package (10 ounces) frozen peas
1 teaspoon sugar
1 tablespoon butter or margerine
2 tablespoons all-purpose flour
1/4 teaspoon black pepper
1 1/2 cups low-fat milk
Place potatoes in a saucepan; cover with water and cook until tender. Cook peas according to package directions; adding the sugar. Meanwhile, melt the butter or margerine in a saucepan; add flour and pepper to form a paste. Gradually stir in milk. Brink to a boil; boil for 1 minute. Cook until thickened and bubbly. Drain potatoes and peas; place in a serving bowl. Pour sauce over and stir to coat. Serve immediately. Yields: 8 servings.
