Chinese Style Boiled Rice

Boiled in the Chinese manner, rice is very light and fluffy. Allow 3 cups of long-grained rice for 6 servings. Rinse rice in cold water until water runs clear. Put rice in a deep, heavy saucepan. Add water, measuring proper amount by placing hand slightly over rice and adding enough wter to cover the back of the hand. Add salt to taste. Fit lid tightly on top of pot. Bring to a boil over a high heat. Cook for 3 minutes after steam shows around the lid. Then cook over a medium heat for 5 minutes. Turn to lowest heat and cook for 12 minutes more. Remove from heat and let stand at least 10 miutes before serving.
Author's note: Do not wash rice and reheat. Serve as is.
