Apricot Bread

Preheat oven to 350 degrees
Spray pans with PAM.
2 cups sugar
1 cup butter
4 eggs
3 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups chopped walnuts
2 cups chopped dried apricots
1 cup apricot preserves
1 teaspoon vanilla
Blend sugar, butter and eggs. Add all dry ingredients. Add apricots, preserves, and nuts. Pour into bread pans. You can bake in either of two sizes: 1) 3 1/2 x 6" for 35-40 minutes, or 2) in a regular bread pan for 1 hour.
