½ cup plain Panko crumbs
½ cup chili sauce or catsup
1 medium onion, diced
1 package mushrooms
2 eggs, lightly beaten
1 ½ teaspoons salt
¼ teaspoon pepper
In a large bowl place the ground beef, Panko crumbs, chili sauce or catsup, onion, mushrooms, eggs, salt, and pepper. Mix together with hands. Put the mixture in a microwave dish and pat down.
Topping
1 cup chili sauce or catsup
1/2 cup brown sugar
1 teaspoon Worcestershire sauce
Before you put the topping on the meatloaf, take a fork and make indentations on the sides of the dish. Then take a fork and make fork marks in the meatloaf so that the topping gets into the meatloaf.
Place a microwave lid on the meatloaf and microwave for 25 minutes. Let sit for 10 minutes before serving.
