Garlic Mashed Potatoes

Roast garlic by putting several cloves (or a whole head!). You can always use it for garlic bread. If you use a whole heat, cut off top 1/2" in a small dish. Drizzle with olive oil. Roast covered in a 350 degree oven for about 30-40 minutes.
Meanwhile, clean and quarter red potatoes. I usually peel about half the skin off. Put in saucepan, add enough water to cover, and bring to a boil. Cook about 20 minutes or until potatoes are tender; drain. Mash potatoes with about 1/3 cup milk, 2-3 tablespoons margarine, and 1/3 cup sour cream. Take the skin off several cloves of roasted garlic and mash with potatoes; salt and pepper to taste.
