Chocolate Satin Pie (Cooked) with Homemade Chocolate Curls
I LOVE Chocolate Satin Pie or as it's fancifully called "French Silk Pie." The best pie I've ever had was at Perkins. They outdo themselves on this one. I stopped by one day, during the week, to get a piece of this pie. I mentioned to man who took my order that it's "the best chocolate silk pie I've ever had!" He said "as I remember it has 5 different types of chocolate in it." Really??? I could do that!
Chocolate Silk Pie has eggs in it and I prefer not to eat uncooked eggs. I found a recipe on-line that cooks the eggs in with the chocolate, but you don't end up with scrambled eggs. It's very delicately done.
For the chocolate, I used a variety of chocolate chips. Milk chocolate, two semi-sweets, and two dark chocolates. I don't care for bittersweet chocolate so I didn't use it. I was going for the "deep, dark chocolate" flavor that Perkins Chocolate Satin Pie had.
Here's the recipe:
1 cup whipping cream
6 ounces mixed chocolate chips
1/3 cup butter
2 egg yolks, slightly beaten
3 tablespoons whipping cream
1 Keebler chocolate crust
Homemade whipped cream (recipe below)
Homemade chocolate curls (recipe below)
In a heavy 2-quart pan combine the whipping cream, chocolate pieces, butter, and sugar. Cook over medium-low heat, stirring constantly, until chocolate and butter are melted, about 10 minutes. Remove pan from the heat.
Take a bowl and ladle some of the chocolate mixture into it. Then pour half of the egg mixture into the chocolate and stir until combined. Pour the chocolate/egg mixture back into the pan and stir until incorporated. Add the rest of the egg mixture to the pan and stir.
Cook mixture over medium heat until it is thick and almost bubbly - about 3-5 minutes. Remove from heat. Stir in whipping cream.
Transfer mixture to a medium mixing bowl and immerse the bowl in a larger bowl of ice water. Stir the mixture until it stiffens and becomes hard to stir - about 20 minutes. Take the bowl out of ice water and put it on a dish towel.
Using a hand mixer, beat the mixture on medium high until it's light and fluffy - about 2-3 minutes.
Scoop the mixture into the Keeble chocolate crust and spread it around with the back of a spoon.
Homemade Whipped Cream
1 cup heavy whipping cream
1 1/4 - 1/2 powdered sugar
In a large bowl pour the whipping cream. Whip on high speed until soft peaks form. Slowly add the powdered sugar in 1/4 increments.
I've found that the whipped topping on the Chocolate Satin Pie at Perkins has a wonderfully sweet whipped cream. That's what I was striving for in making this pie and the whipped topping.
Continue adding powdered sugar until you reach the desired flavor for your pie. Peaks on the whipping cream won't be peaked; but it will be a "firm" whipped topping.
Scoop the mixture onto the already made chocolate pie; even out with the back of a spoon.

1 cup mixed chocolate chips
1 stick butter - cut-up into pieces.
In a small saucepan, put the chocolate chips and butter. Turn the heat onto medium-low. Once the chocolate chips and butter begin to melt, stir constantly. It should take about 5-7 minutes for the chips and butter to melt. Once melted, pour the mixture into a bread pan and put it in the freezer. Let freeze for about an hour. Take the pan out of the freezer and run hot water over the bottom of the pan until you see the chocolate begin to loosen from the edges. Take a knife and run it around the loose edges. Take a flat spatula and go until the chocolate and lift it out of the pan and put it on a plate. Take a knife and cut the chocolate in half horizontally. Using a vegetable peeler, go down the sides of the chocolate making curls.
This is so easy and such fun! I had a blast making my own chocolate curls!!
