Anna's Macaroni and Cheese
Turn oven to 350 degrees to preheat
1/2 cube butter
1/4 - 1/2 cup flour
2 cups milk
1/2 teaspoon salt
pepper to taste
3 cups shredded cheddar cheese
2 cups UNCOOKED macaroni
2-3 tablespoons of dehydrated onions (I rehydrate in a bowl of water, put into the microwave for 1 minute, and let cool for a few minutes then drain before adding to sauce).
1) In a large pot of boiling wter, cook your pasta (8-10 minutes) and drain. While this is cooking do the following steps:
2) In a large skillet or pot, melt butter and add the flour to make a roux; let it almost brown. Slowly add milk, a little at a time so it doesn't clump into "flour balls". Keep stirring as you add the milk until the sauce becomes thick. If it takes a bit more flour add and stir to blend.
3) Add 2 cups of the cheese, salt, pepper, and drained onions into this cream sauce. Stir to blend.
4) Add the drained cooked pasta into the cheese sauce. Mix to evenly coat the pasta. Pour into a "PAM'd" casserole dish. Top with the rest of the grated cheese.
Bake for about 45 minutes until golden brown.
Hint: You can make the casserole ahead of time, then bake later for 1 hour.
