Potato Pancakes
Mrs. Shroeder (Alice Nulle's mom)

2 large cups raw grated potatoes
1 tablespoon flour
2 eggs
salt, to taste

Beat yolks of the 2 eggs, slightly, and fold into the potatoes with flour and salt.  Lastly, fold in the 2 egg whites beaten to a stiff froth.  Cook in hot skillet in more fat (vegetable oil) than ordinary pancakes until crisp and brown.
