Fantastic Blueberry Cobbler

This is a great way to enjoy blueberries, serve warm with a scoop of vanilla ice cream and enjoy! I always double the topping ingredients. If you decide to do this add about 10 minutes of baking time to ensure the middle is done. Frozen blueberries may be used.
4 cups fresh blueberries
3 tablespoons white sugar
1/3 cup orange juice
1/4 cup tapioca
2/3 cup all purpose flour
1/4 teaspoon baking powder
1 pinch salt
1/2 cup butter, softened
1/2 cup white sugar
1 medium egg
1/2 teaspoon vanilla extract
1) Preheat oven to 375 degrees F. In a 9 inch square baking dish, mix blueberries, 3
tablespoons of sugar, orange juice and tapioca; set aside and let sit for 10-15 minutes.
2) In a medium bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla
extract, flour and baking powder together. Gradually add flour mixture and stir until just
combined.
3) Pour blueberries in baking dish and drop batter by rounded tablespoonos over mixture. Try to
cover as much filling as possible.
4) Bake in preheated oven for 34-40 minutes or until topping is golden brown and filling is
bubbling.
